La Cantera Resort & Spa Appoints New Executive Chef and General Manager

La Cantera Resort & Spa, part of the Destination Hotels Luxury collection, welcomes new management to its world class concept, Signature, inspired by Chef Andrew Weissman. Executive Chef Laurent Rea joins newly appointed General Manager Patrick Bean to execute Weissman’s unique vision for the resort’s freestanding restaurant and bar. In concert, they will lead the staff to create a gracious, timeless, relaxed Hill Country experience for those looking for a quaint, non-traditional alternative to upscale dining.
Rea was featured in Best Chefs in America in 2013 and his culinary career highlights include stints in Venice, Italy; Strasbourg, France; and Great Britain before settling stateside in New Mexico and later Texas.
Bean is a San Antonio native, “Signature is the capstone of my career. My management skills and food industry expertise complement Andrew’s culinary vision which is founded on classic techniques and Texas touches.”
The beguiling menu includes the world’s finest ingredients, sometimes culled from Signature’s own back yard, where the herb garden brings freshly-picked flavor to the table. A beekeeper is on staff to cultivate La Cantera’s own signature Texas honey and a forager will harvest wild ingredients already growing on the grounds, such as lavender, rosemary and prickly pears.
Local and organic ingredients change the menu as the seasons peak and wane, but the constants are quality, flavor, artistry in the kitchen and superlative southern service.
Signature crowns Andrew Weissman’s 25-year culinary career, which began in Europe, moved to New York City and finally came home to San Antonio, where he has opened seven popular and critically acclaimed restaurants, including the fondly-remembered Le Rêve. That first restaurant gained national recognition in the pages of The New York Times, Bon Appetit, Food & Wine magazine, Gourmet magazine, Texas Monthly, and other illustrious publications.
